There is no denying that prawns are one of the most delicious foodstuffs,
the wonderful taste and flavour of which no gourmet can afford to spare.
Prawns are produced from the gulf of Pohai in the course of their
annual migration to Taku Bar, Tientsin, which takes place in the seasons of
Autumn and Spring. The quality of prawns produced in Spring is remarkably
delicate and that in Autumn lusciously fat. Prawns have become one of the
most Favorite Foods for the Chinese people as well as the other peoples all
over the world.
Now considerable quantities of Quick Frozen Prawns have been con-
tinually shipped abroad with the result that not a few people have a chance
to purchase and partake of this kind of Chinese excellent fare from their own
markets over there.

When all this is done, roast it on
all sides except the chest in a brick stove
at a temperature of 250 ?C. until its co-
lour becomes perfectly brown. It requires
about 30 minutes to complete the whole
process. The duck is then cut into thin
slices, well seasoned with flour jam, with
or without Scallion and radish before being
put into the Chinese pancake.

Boneless Duck
Remove all bones from the duck, leaving
its skin intact. Then chop the meat together
with pork or beef, make it well seasoned with
salt, pepper, eggs, cream and about 5-10 grams of
Monosodium Glutamate. After this being done,
put the whole meat into the skin and sew,it with
thread, then keep, on roasting for 30 minutes.

The Fisheries of New China in recent

Chinese Wild Ducks are well known to our overseas
consumers. They are mainly available in spring as well
as in winter.
The outward appearance of wild ducks is somewhat
similar to that of the domestic. The only difference lies
in the fact that wild ducks have a smaller size and pretty
feather.
The following are the four different sizes of the ducks
of the same family known as wild ducks:
Mallard,
Pintail,
Lake Teal,
Small Teal.
Of these, the Mallard is the biggest and the Small
Teal the smallest in size.
Chinese Wild Ducks may be served in numerous ways:
viz., roasting, braising, steaming, etc. They are delicious,
having such nutritive values as fat, protien, vitamins
and inorganic salt --- all essential to human health.
Chinese Wild Ducks are all well frozen and care-
fully selected for export so that they may retain their
original freshness and nutritive values.
