DESCRIMRS: *Meat, *Chromatographic analysis,
An-iinoacids, Ammonia, Decomposition.
A quantitative analysis of the decomposition of meat
proteins Is made to determine the freshness of meat
after prolonged storage. The individual amino acids
are studied via partition paper chromatography. The
procedure is described in decail. Other analytical
methods used include bacterioscopy; ISH determination:
reaction with CuS04 permddase, aM formol; and visiml
fluorescence. The free amino acids as seen in the
chromatogram, are listed. The presence of threonine
and methionine arc noted.
