ABSTRACTt The author deplores the haphazard state of tests of the
hygienic quality and state of preservation of tomato con-
centrates in Yugoslavia. No general test standards exist.
The Department of Food Hygiene of the Centralni higiJenski.
zavod (Centrhl Institute of Hygiene) in Zagreb in 1954-1955
carried out tests on the quality of tomato concentrates pro-
duced in several Yugoslavian plants. The concentrates
were subjected to tests for; 1) bacteria, enzymes, spores
and mould by the Howard-Stephenson method of microanalysis
2) dry mass, 3) copper content, 4) vitamin C, 5) PH Value-
For the tests concentrates ranging from 1-6 months old were
used. The results are drawn up in Tables 1, 2, and show
wide divergences both between individual batches from the
same plant and between batches from separate plants. The

from damaged and affected fruit and the author proposes
that these preliminary studies of the problem be used as
the basis for the elaboration of testing standards for
tomato concentrates. Viere are 2 tables and 7 references,
of which 6 are Yugoslavian and 1 American.
