Budapest, Magyar Allatorvosok Lapja, Vol 18, NO 7 , July 1963, pp 288-291, Abstract: [Authors' Hungarian summary modified] The authors established that a protective layer similar to fascia. is produced on the surface of the meat as an effect of dryin.g. This layer decreases the wi�ight loss due to evaporation during cooling and retards soiling and bacterial deconposi- tion. Thus, it is advantageous both from the points of economy and hygiene. Study on wetting of meat shows that between wetted and not-wetted cut meat there is a weight difference of 1 per cent after three days on 250C. The weight difference, under similar conditions, is 0.5 per cent for meat which has this fascia-like layer. Studies on weight loss under varying conditions are reported. The ammonia nitrogen content of meat was also determined un- der varying conditions. Production of ammonia starts immediately after slaughter and its rate is greatly increased by temperature. Ammonia IN de- terminations were used instead of the often questionable evaluation of bac- terial counts, although the wet medium of meat facilitates the bacteria-free decomposition as well which also produces ammonia. In 1), the water needed by different industries and the ratio of surface water in the water supply of different nations are tabu- lated. If a small vein crosses over a large artery the vein forms an arch climbing over the artery and nestling close to it. If a large vein crosses a small artery, the rigid artery may be pressed into the lumen off the vein. the vitreal face of the vein not presenting any visible changeor the vein is deflected in Its course as if it stum- bled over the artery. or in a grosser form the vein may be lifted upwards towards the vitreous forming an edged arch, the diameter of the arch being larger than the lumen of the small artery, the vault being caused by the rigidity of the venouS walls. If a vein crosses over an artery of the same calibre, the vein may form an arch over the artery, that means It ascends in an oblique plane and descends in the same way, or the vein to dene cted from its direction and forms two rectangular bends, one in front and the other behind the crossing. These reversed crossing phenomena are less frequent than the regular ones because of the relative scarci- ty of reversed crossing.
