Abstract Greatest water-absorptive capacity is shown by the meat
of young steers (2-3 years) that is still warm and is de-
rived from animals of medium degree of fattening. Coo-
led and frozen meat absorbs less water than warm meat of
the saw degree of plumpness, and the difference can be
as hi&ti as 40% in the case of meat of medium plumpness.
Addition to the meat of Na-blearbonate, fibrisol and
blood protein, in powder form, increase its water-absorp-

Abstract A study of the factors which affect the quality of the ca-
sings and of the causes of the occurence of defects. It
was found that on preservation with 0.3-0.4% solution of
formaldehyde a strong but insufficiently elastic product
is ootained. Defatted and extracted casings can be pre-
served with a 0.5% solution of formic or lactic acid,
or with a mix-Lure of these solutions taken in equal pro-
portions.
