Title Rapid Amperome-tric Determination of Starch.

Abstract Starch (S) was determined amperometrically by titration
with 0.01 N solution of I. The absorption of I by pota-
to s is of 4.46 --"' 0.04%, by wheat S of 5.45 * 0.05%.
The method gave well reproducible results (provided that
the adsorption of iodine by the given variety of S is
known) which were similar to the results of the hydro-
lysis method (error 1 1.0%).

Abstract: A new accurate and specific method of starch (I) deter-
mination throuei amperometric titration by 0.005-0-01 n.

is also applied for a quantitative control of anylose
(II) aging process, which is accompanied by a proportional
diminution of the capacity of II to react with 12, and
for the study of interaction between II and 1 0 Iodine
joins at first the internal sphere of the chafns of II,
which does not change the viscosity of the II solution,

and then the surface of the chains of II, which causes an
increase of II solution viscosity. Alkali decreases the
capacity of I to interact with 12. therefore its presence
for the preparation of the indic6tor solution of II should
be avoided. In order to carr7 out the amperometric ti-
tration, to the measured quantity of 4 to 6 mg; of 1, 25
ml. water are added and heated; 5 ml of I n. HC1 are added
after cooling, electrodes are installed and the mixture
is titrated by stirring it with the 12 solution and plott-
ing a titration curve in a coordinate system: titrants
volume (ml) - force of the current (mca). The content of
I (in ep) is computed according to the formula X = B - 100/A.,
where A is the amount Of I absorbed by the pure I., B-the
amount of 12, absorbed by ?h7e examined sample determined

5.45+ 0.0%. The error In determination of I does not

TITLE: The Fractionation of Amylose According to the Degrees of
Polymerization (Fraktsionirovaniye amilozy po stepeni
polimerizatsii)

ABSTRACT. The principal part of starch consists of amylopectine and
amylose. For determining the'characteristics of these sub-
stances their molecular weight must be known. This is ob-
tained by decomposing the substances into fractions and de-
termining the average molecular weight of the separate frac-
tions. In this article, a new method for fractionating amy-
lose is proposed. Amylose is dyed bl-6~~*under the action of
iodine. The amylose molecules form spirals in the coils of
which the iodine molecules are located. The deve.Loping com-
plexes amylose-iodine are in equilibrium with the free io-
dine in the solution. The amylose-iodine complex is an un-
stable colloid which is precipitated from the solution un-
der the influence of electrolytes. This fact is used for
fractionating-the amylose. If the iodine solution is added
to the amylosd'~ iodine complexes are formed with molecules
of a high degree of polymerization. Reactions with molecu-

The Practionation of Amylose According to the Degrees of Polymerization
are saturated. If an electrolyte is present in the solu-
tion, the formed complexes Are immediately precipitated.
The characteristics of the various fractions of potato
amylose are given in the table. The fractionating of
wheat and corn amylose was carried out by similar methods.
There is 1 table and 11-- non-Soviet references.
