A quantitative analysis of the decomposition of meat
proteins is made to determine the freshness of meat
after prolonged storage. The individual aniino acids
are studied via partition paper chromatography. The
procedure is described in detail. Other analytical
mediods used include bacterioscopy; pi I determination;
reaction with CuSO-I peroxidase, and formol; and visual
fluorescence. 'Ibe free amino acids as seen in the
chromatograrn are listed. The presence of threonine
and methlonine are noted.
